Chocolate Crackles!

Hey everyone,

Here is a wonderful party pleasing  recipe you'll love! Easy to make!


Ingredients


  • 1 cup cocoa pops or rice krispies
  • 1/4 icing sugar / powdered sugar
  • 2 tbs copha = vegetable shorting (melted)


Method


  1. Line a 6 cup cupcake / muffin tray.
  2. Melt vegetable shorting in microwave for 1-2 minutes or until fully melted.
  3. Place cocoa pops in a bowl and mix shorting and icing sugar until all incorporated. 
  4. Spoon cereal in cupcake tray and pop it in the fridge for 10 minutes or until chilled and set.
  5. Eat and enjoy!

Chocolate Mousse

Hey everyone,

I love Chocolate Mousse and want you to try it out!








Ingredients  


  • 50 g white chocolate
  • 50 g dark chocolate
  • 2 egg whites separate 
  • 2 egg yolks separate 
  • 2 tsp sugar in separate bowls 
  • 50 mL water each for chocolate
  • 2 packs mini chocolate cups or mini bowls


Method


  1. Melt chocolates separate with water in the microwave or over a double boiler. Then add the egg yolk to each of them.
  2. Whisk 1 egg white at a time in different bowls until soft peaks form. After add sugar and whisk until stiff peaks form. 
  3. Fold in melted chocolates in each bowl until incorporated. 
  4. Place mousse in zip lock bags or piping bags and fill the mini cups or mini bowls. 
  5. Sprinkle with chocolate flakes and put in fridge for 30 minutes or so before serving. 
  6. Eat and Enjoy!

Apple Pie

Hey Again,

Apple Pie recipe!


Ingredients


  • 2 1/2 cups all-pourpose flour
  • 1 tsp baking powder
  • 2 tbs sugar 
  • 1 egg yolk
  • 1/3 cup vegetable oil 
  • 1/2 water
  • 1/2 sugar
  • 1 tsp cinnamon 
  • 1 tbs lemon juice
  • 2 tbs corn flour ( corn starch)
  • 4 - 5 peeled, cored and thinly sliced apples

Method

  1. Mix flour, baking powder and sugar together. Add egg yolk, oil and water. Knead until dough forms and smooth.
  2. Place in fridge for 30 minutes.
  3. Place apples in a large bowl and stir with sugar, lemon, cinnamon and corn starch. 
  4. Roll out dough to fit pie dish and put in. Fill it with the filling and put the top dough over it.
  5. Slit the top of the pie like a cross and bake for 40-45 minutes or until golden brown. 
  6. Cool for ten minutes and serve. Can be served with some vanilla ice-cream / custard.

Apple and Cinnamon Muffins

Hey everyone,

Apple and Cinnamon Muffin recipe. It tastes great!





Ingredients 


  • 125 g butter (melted)
  • 150 g soft brown sugar
  • 2 eggs (whisked) 
  • 3/4 cups milk
  • 2 cups all-pourpose flour
  • 1 tsp baking powder 
  • 2 tsp cinnamon
  • 2 apples peeled, cored and chopped 


Method  


  1. Grease a 12 muffin tray. 
  2. Mix butter and sugar until combined.
  3. Beat in eggs and milk and combine.
  4. Add all dry ingredients flour, baking powder and cinnamon.
  5. Pre-heat oven to 180° Celsius/ 350° Fahrenheit. 
  6. Fold in apple pieces with spatula.
  7. Bake 15-20 minutes or until golden brown.
  8. Cool on wire rack  for 10 minutes then eat and enjoy.

Chocolate Chip Cookies

Hey everyone,

Here is an awesome recipe to make the best homemade Chocolate Chip Cookies.







Ingredients:


  • 125 g unsalted butter (soft)
  • 1 cup soft brown sugar
  • 1 tsp vanilla extract
  • 1 egg lightly whisked 
  • 1 tsp baking powder
  • 1 3/4 cups all purpose flour
  • 1 tbs milk
  • 250 g dark chocolate chips 


Method:


  1. Pre-heat oven to 180° degrees celsius or 350° degrees Fahrenheit. Line 3 baking trays with baking paper/parchment paper.
  2. Mix butter and sugar until creamy. Then add vanilla and milk until combined.
  3. Pour egg in and mix. Add flour and baking powder sifted, stir.
  4. Place chocolate chips in the bowl and fold them in. 
  5. Spoon mixture with tablespoon on to trays about 4 cm apart. Bake for 15-20 minutes, once done put the cookies on a wire wrack and let them cool for 5 minutes. Eat and enjoy.

Chocolate Mud Cake

Hey again,


Here is a recipe on chocolate mud cake hope you like it. 



Ingredients 

200 g   dark chocolate,
            coarsely chopped 

250 g  salted 
           butter, chopped

1          cup (250 ml) water 

1         cup (200 g) caster sugar/
           granulated sugar 

1 1/2    cups all-
            purpose (plain) 
            flour, sifted

1          cup self-raising flour, sifted

2          large eggs, lightly beaten

1/4       cup cocoa powder, sifted 



Method 

1. Preheat oven to 350º F/ 180º C/ gas 3. Grease a 9-inch (23 cm) cake pan. Line with baking / parchment paper.

2. Combine the chocolate, butter and sugar until combined ( you can melt this over medium/low heat. Set aside to cool for 30 minutes.)

3. Add flours and cocoa  powder. Stir until combined. Add Melted butter, chocolate and sugar mixture with dry ingredients. 

4. Pour mixture into prepared pan. Bake for 1 hour and 30 minutes or until skewer inserted in the centre has moist crumbs clinging. Stand for 10 minutes in pan. Turn out onto a wire rack to cool. 



Tips 

You can make a chocolate ganache for on top of this Delicious cake. 

200 g chocolate chopped
2/3 cup thickened cream 

Melt over medium - low heat  until melted. 
Place in fridge for 30 minutes to an hour. 
Spread over entire cake. 

EAT and ENJOY!!!

Caramel Chocolate Cupcake flowers

Hey everyone,

Here are some pictures of my fancy cupcakes that I have arranged into two blue and pink flowers. Don't they look awesome, my younger cousin Holly helped with the decorating. The decorating explains its self. The only extra bit was that I put a little sugar butterfly on one of the cupcakes on each flower to show that it has landed on them.  Recipe for caramel chocolate cupcakes and butter icing/frosting are under the pics. Caramel Chocolate Cupcakes

Ingredients 

1/2 cup (50 grams) Dutch-processed cocoa powder
1 cup (240 ml) boiling hot water
1 1/3 cups (175 grams) all purposeflour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup (113 grams) unsaltedbutter, room temperature
1 cup (200 grams) granulated whitesugar
2 large eggs
2 teaspoons pure vanilla extract
1/2 caramel chocolate chips melted


Method

Preheat oven to 375 degrees F (190 degrees C). Lightly butter, or line 16 muffin cups with paper liners.

In a small bowl stir until smooth the boiling hot water and the cocoa powder. Let cool to room temperature.
In another bowl, whisk together the flour, baking powder, and salt.

Then in the bowl of your electric mixer, or with a hand mixer, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating until smooth. Scrape down the sides of the bowl as needed. Beat in the vanilla extract. 

Add the flour mixture and beat only until incorporated. Then add the cooled cocoa mixture and stir until smooth.

Fill each muffin cup about two-thirds full with batter and bake for about 16 - 20 minutes or until risen, springy to the touch, and a toothpick inserted into a cupcake comes out clean. 

(Do not over bake or the cupcakes will be dry.) Remove from oven and place on a wire rack to cool. Once the cupcakes have completely cooled, frost with icing. You can either spread the frosting on the cupcakes with a small spatula or if piping, use a large Wilton 1M open star tip to make lovely swirls. These cupcakes are best the day they are made, but can be covered and stored for a few days.

Makes about 16 cupcakes.



Easy butter icing 


Ingredients 


250g butter, cubed, at room temperature
450g (3 cups) pure icing sugar, sifted
60ml (1/4 cup) milk

Method 

Place the butter in a large mixing bowl. 
Use an electric beater to beat for 2 minutes or until very light and fluffy. 

Gradually add the icing sugar and beat until the mixture is very pale and fluffy. 
Gradually add the milk and beat until smooth and well combined.

Basic Chocolate Muffins

Ingredients 

2 1/4 cups self-raising flour, sifted 
1/2 cup cocoa powder, sifted 
1 cup caster sugar 
3/4 cup dark chocolate chips 
1/2 cup vegetable oil 
2/3 cup milk 
1 teaspoon vanilla extract 
2 eggs 


Method 

  1. Preheat oven to 180°C/160°C fan-forced. Line a 12-hole, 1/3 cup-capacity muffin pan with paper cases.
  2. Combine flour, cocoa, sugar and chocolate chips in a large bowl. Make a well in centre. Whisk vegetable oil, milk, vanilla and eggs in a large jug. Add oil mixture to well (see Cooking class, below). Using a wooden spoon, stir until just combined (don't over-mix). Spoon mixture into paper cases.
  3. Bake for 25 minutes or until firm to touch and a skewer inserted into the centre comes out clean. Stand in pan for 5 minutes. Transfer to a wire rack to cool. Serve.
